Oatmeal Pancakes with Banana Syrup

This oatmeal pancake is a favorite of mine for several reasons. It is full of healthy ingredients, tastes great, and is very versatile, as well as it keeps me satisfied for most of the morning.

When my girls were in high school we would leave for volleyball tournaments at O dark hundred and I didn't have time to sit down and eat a healthy breakfast before we left. So I came up with a version of the pancake that I could cook as I got ready and then eat in the car on the way. It's like eating a giant oatmeal cookie!

Makes 1 serving

Oatmeal Pancake with Banana Syrup

  • 1/3 cup old fashioned oats
  • 2 egg whites
    2 T walnuts, broken into large chunks
  • 1/2 t cinnamon
  • 1/2 t baking powder
  • 1/2 t vanilla
  • Pinch of sea salt
  • 1/2 ripe banana
  • 2 t pure maple syrup


  1. Heat fry pan over medium stove and spray with Pam.
  2. Combine pancake ingredients and mix well.
  3. Pour into pan and shape into a round pancake.
  4. Cook until nicely brown about 4-5 minutes.
  5. Carefully flip pancake and cook another 3-5 minutes until done.
  6. As pancake is cooking, mash the banana and stir in the maple syrup.
  7. If you prefer extra syrup, use 1 whole banana mixed with 1 T syrup.

Oatmeal Pancake to Go

  1. Mix together the same pancake ingredients as above. Then cut 1/3 banana into small chunks and gently stir into batter along with 1 T pure maple syrup.
  2. Cook over medium/medium low heat about 5-7 minutes. CAREFULLY flip (it likes to fall apart, but once you get it flipped you can keep it together) and cook another 3-5 minutes.
  3. Turn off the heat and let sit in the pan until you're ready to leave.
  4. Put it in foil, sprinkle with a little sea salt, wrap well, and go!

Sylm Cook says: It's important to cook the cakes very slowly to allow the insides to cook all the way through. Instead of the banana syrup, try it with a half cup of natural applesauce mixed with 1 T pure maple syrup, or stir together 1 T peanut butter and 1 T maple syrup and spread on top. Yum!
