Crispy, Crunchy Dill Salad

I try to serve some kind of 'greens' with almost every dinner meal. This is a delightful salad with a nice, clean, fresh taste. It's easy to make and the combination of all the different color green is beautiful. I served it to my sister once and she said "this is like a party in your mouth"!

The salad is perfect as is, but can be modified to suit your own taste.The addition of fresh Parmesan or Feta cheese is quite good. For a nice contrast in colors, try adding some dried cherries or pomegranate seeds.

Party In Your Mouth Salad

  • 2 romaine hearts, cut into 1/2 inch strips (about 6 cups)
  • 1 bunch scallions sliced (use some of the green)
  • 2 salad cucumbers, chopped
  • 1 large avocado, cut in pieces
  • 1 cup chopped fresh dill


  • 1/4 cup olive oil
  • 3 T fresh lemon juice
  • 2 T white wine vinegar
  • 1 t sea salt
  1. Prep the salad ingredients and mix together in a salad bowl.
  2. Whisk together the dressing.
  3. Gently toss the salad with dressing.
  4. Sprinkle with more salt and fresh ground pepper. Serve with a smile!

    Sylm Cook says: For more nutritional value and color, add some chopped spinach. Don't skimp on the salt as it is necessary to enhance the flavor. I would almost say this salad tastes better the next day. It stays pretty crunchy and the flavors blend well, making for an even bigger party for your mouth! :)
