The inspiration for this was to use up the peppers in my fridge with stuff I already had in my cupboard for a quick, healthy, protein filled lunch!
I like it with a dollop of Greek yogurt, chopped avocado and veggie dipping sticks. This also makes a great wrap with shredded lettuce and cheese.
5 Minute Refried Bean Dip
1 can good quality black refried beans
3/4 cup chopped peppers (red, green, sweet mini...whatever you got)
2 T chopped jalapeños from a jar (use more if you like it hotter)
4 T Franks Red Hot Original sauce
1 T white vinegar
1 T chili powder
